what is the pro vs con when it come to doing the mod?

Been a while since ive been into the jailbreaking scene, but basically the benefits are SSH (allowing you to FTP into your iPod and access any file), Apps not approved by apple, cracked apps (grey area), cydia, themes for your iPhone (summerboard)
There really are no cons... If you jailbreak and dont like it, you can always restore your iPhone to the original FW... I guess the only con would be when you jailbreak/restore you need to re-sync all your music and apps...
Jailbreaking basically just 'unlocks' your phone to anything you want to do to it, you dont really lose anything...
(But I am not completely sure now, as its been a while since I jailbroke my iPod or even updated it...)

There are loads of tut's and the programs are public so you should have no problem there.
The only thing is I have been out of the scene for so long I dont know what to tell you... The last program I used to jailbreak was quickpwn I doubt if thats still being used.
You'll probably need to wait for iamwatt or BobSeager to reply to this thread, they are kind of the RHPG genius' (I say that because 'genius' is the name given to the tech's that work for apple, not because theyre smart )
In the mean time, I would recommend checking out youtube for tutorials. If you eager to jailbreak, PM me i'll give you the link of a very popular forum dedicated to all things iPod/iPhone

tried using liberty and it puts my phone in recovery but then stops working

from what i understand in sept. at&t had an update on there iphones that removed the jailbreak and does not allow them to be jailbroken.
you can correct me if im wrong but im pretty sure you have to wait for another program to come out.

update you're iPhone to the 3.1.2 firmware through iTunes and blacksn0w will jailbreak it no problem. and it easier than ever now. once you launch the program you just click one of two options and a few minutes later the phone is jailbroken. and it doesn't erase it. . . this is so easy a caveman can do it. so just google blacksn0w.
this also allows you to unlock the iPhone using the latest firmware which is 3.1.2 and is the firmware with the baseband that they said couldn't be hacked, you're good to go. . .

It looks to me like you want to do a fresh update/restore to get to 3.1.2 FW and 05.11.07 baseband (which should both be yours when you update).
Since you're using TMobile you might want to switch your SIM with AT&T for the activation. Sometimes TMobile SIMs don't 'work' with the activation process.
