There are a few ways you can do it.

1) The data migration kit (the 60gb hdd doesnt come with it, only the 120 comes with it) you can buy it online, its cheap due to the fact that most people do not need it after they have used it once.

2) HDD adapter. Which is basically the same as the data migration kit except it transfers data to your computer, and you can use it as many times as you want. Im not completely sure where to buy it as it comes with CK3's ebay or modding sites are likely to sell it individually

3) Memory card. You can use your mem card to transfer your profile and game saves etc. Its a pain as you can only transfer small amounts of data at a time. Also, you cant move large files. I think there is a third party company that produces 4gb memory cards that are expandable to 16gb. I would assume you can find one of them on ebay. Possibly your local electronics store aswell.

No because you're not altering any of the info in the file. If you happened to have to hdd adapters you just hook both of them up and transfer from one hdd to another. But since you probably don't just make a specified folder on your desktop transfer everything to that and then to the new hdd.

Everything. Basically you want to clone your 20gb, let your 360 format your 60gb, and insert everything into the 60gb.
